Creamy garlic and mushroom mustard sauce

Hi all this is the quick and simple recipe for my amazing creamy garlic mushroom sauce. It’s stunning with steak, chicken or beef.

Pan fry onions, leeks and mushrooms in garlic fry light, or regular fry light and garlic.  I prefer the fry light as it’s super quick!!! Mix together chicken stock, a tsp of mustard powder and a dollop of quark. Add to the onions, leeks and mushrooms and gently heat through on a low heat. Take about a minute! Add lots of pepper and spoon over your steak or chicken. Amaze and syn free!!!

Carrot cake baked oats muffins 

Hi all, as promised here’s the recipe for these yummy muffins. I’ve got various porridge cake recipes on here, some with quark or yogurt, some with fruit etc…. Today I fancied this one inspired by a gorgeous colleague Pheobe. 

HEB and syn free xx 

35g porridge oats 

50ml of skimmed milk (taken from your HEA) 

3 tbs stevia 

1 egg

A sprinkle of ginger and cinnamon

A grated carrot &

Creme caramel flavouring or almond essence. 

Mix together and pour in silicone moulds.

Bake in a pre heated oven on 200 for approx 15 minutes or till golden.

Serve with speed fruit and fat free quark mixed with sugar free squash. 

You can play around with the flavours or add fruit, choc shot, whatever you fancy, just remember to syn cooked fruit.

Chicken curry in a hurry. 

This is one of my all time favourite recipes!! I’d even go as far as to say its a signature dish of mine!! I love that you can adapt it to suit you, add spinach, lentils, chickpeas, Whatever. The basic recipe is so simple and tasty by itself though.

Fry off some garlic, ginger, chilli, peppers, onions mushrooms and chicken. Once all browned add Schwartz curry powder. I don’t measure, but I add a lot!! I prefer the hot one, you can use medium if you prefer it less spicy.

Then add 15 ml of chicken stock and a tin or chopped tomatoes. Simmer till all cooked through. Season. Take off the heat and stir in a tbs of quark, (you can use fat free yogurt if not on eesp) for the best curry add freshly chopped mint and coriander. I served mine with cauliflower rice and salad, Yummy!!!!

Carrot porridge cake with peanut butter topped fruit 

This was incredible!!!! I make these a lot, this is today’s version. 
35g oats

4 tbs of stevia or sweetener

A grated carrot

Cinnamon

A capful of sugar free berries squash

An egg

A heaped tbs of quark 

I also added a little flaxseed & chia seeds. These can either be a healthy extra or syns. 

Mix together and put in a plastic microwaveable tub. Cook for just under 4 minutes or until it comes away from the edge. You can bake them in the oven, but I’m impatient!! 

The pb2 powder is 1 syn per 6g, I used 3g & mixed with water to make a paste. Just drizzle over your fruit.

HEB and 1/2 syn. You don’t need to add the flaxseed or chia seeds, I just do this for health.

Blackcurrent & almond zoat pancakes & peanut butter cream. 1 syn

OMG these were amaze!!!!! 

I just mixed 35g of oats, 1 tbs of stevia, some sugar free squash, a tbs of fat free yogurt or quark, an egg and some almond essence. For added speed a added half a grated courgette from my ZOATS recipe. 

I just cooked them in a hot frying pan with fry light and grilled the top. Add an extra egg if your prefer them fluffier. 

The cream is simply a tsp (6g) of peanut butter powder made in to a paste with a little water. Then mix it in with quark or ff yogurt. Tip on top of your strawberries and sprinkle with cinnamon.

Piri piri and paprika pork. Dessert strawberry fruity blancmange 

Evening all. Tonight’s lovely food recipes for you :- 

Piri piri and paprika pork. 

Ingredients

4 thick pork loins, all fat removed

Garlic fry light (can use regular)

2 onions, chopped. I use 1 red and 1 white.

Free vegetables of your choice, I used carrots, peppers, broccoli and green beans

1 & 1/2 cartons of passata

2 tbs of Schwartz Piri Piri Seasoning. It does have quite a kick!! 

2 chicken stock cubes

A tbs of smoked paprika

Mixed herbs

Salt and pepper

Method
Preheat the oven to 180°C. Seal the pork in a frying pan and onions, then place in a large oven tray sprayed with garlic fry light. 

Roughly chop your vegetables and throw in the tray.

Boil the kettle and place passata, salt and pepper and the stock cubes into a large jug. add the piri piri seasoning and paprika. Add approximately 50ml of boiling water and stir until the stock cubes have dissolved.

Place the pork in the tray, and then pour over the seasoned tomato mixture. Sprinkle with mixed herbs. Place in the oven for around 25 minutes. 

I served mine with butternut squash mash, topped with a little light primula cheese from my a choice. 
Dessert. Strawberry fruity blancmange:-

1 sachet of sugar free strawberry jelly made up with 1/2 pint of boiling water, add a sachet of gelatine and mix well. Add just under 1/2 pint of cold water, frozen mixed berries and a heaped tbs of fat free quark, or yogurt, mix and pop in a jelly mould. 

Leave to set in the fridge for about an hour. Serve with more fruit and fat free quark mixed with stevia Nd vanilla essence. Jelly, fruit and cream!! The sachet is 1.5 syns so less than 1 syn if you spilt between 2.
