I had such an amazing weekend. My two very close friends M and B were over from Sweden, I haven’t seen them for ages!!! Friday night my friends, bf and I went and met them for a “few” drinks, it was a late one!! We just couldn’t stop talking!!!! I also spent Sunday catching up with them again. I adore them and miss them being here so much!!!!!! So sad they’ve got to go back 🙁 it was great while it lasted though and tbh I don’t think my body can handle them being here all the time lol!!
In between being a social butterfly, my bf and I had a big garage clear out!!! I’ve got so much stuff I just don’t need, so we were ruthless!! It was hard work and not exactly fun but it was worth it.
I had my first ever trip to the tip!! I went dressed in a black maxi dress and wedges ha ha, slightly inappropriate for the tip! This may be weird but I actually really really enjoyed it, apart from the vile smell!!!!! It felt soooooooo good just chucking stuff over the edge, in to the skips, gone forever!! It was very cathartic and got me thinking…………
How much rubbish do we hang on to in other ways? Past weight loss experiences that may not off worked, all the negative things you’ve said to yourself over the years, all the things others may of said to you over the years, feelings and emotions you’ve felt, past hurt from previous relationships, a job you may of lost, a friend you may of fallen out with and so on….. All this emotional baggage can weigh us down, excuse the pun!! It can hold us back from being the happy and successful people we want to be.
I also likened my tip experience to the weight I’ve lost and old clothes I threw out. When I lost 42lbs, 3 stone, going from a size 16 to a size 10, I has no intention of ever going back!! I don’t really think of it as losing weight, as we don’t want to find it again do we!!!! I think of it as getting rid of that weight forever! Literally grabbing it and throwing it in the skip, never to be seen again!!! I kept one item of old clothing to remind myself of what I’d achieved but all the rest went!
Letting go of the past feels amazing!! Getting rid of weight forever feels amazing!! Being able to give away old clothes that are too big actually feels amazing!! So whether you need a practical clear out, ie throwing out old clothes or anything that brings make bad memories or whether you need to have a mental clear out, mindfully getting rid of any negative thoughts forever!! Go for it!!! Trust me you’ll feel so much better for it!!!!! You will feel, you’ve guessed it!!! AMAZING!!!
Today’s featured recipe on my fb page is Big Mac in a bowl. I love love love Big Macs, but I don’t love the syns!! This amazing version is a fraction of the syns and mega easy. Enjoy!!!
One of my favourite ever slimming world recipes!!!
Big Mac in a bowl.
There’s two ways of making this.
First one :-
Total time: Less than 30 Minutes
Syns per serving:1/2
Low calorie cooking spray
500g lean beef mince (5% fat or less)
1 onion, finely chopped
2 garlic cloves, crushed
Salt and freshly ground black pepper
½ iceberg lettuce, roughly shredded
8 gherkins, sliced
1 small red onion, finely chopped
2 tomatoes, roughly chopped
For the SW super sauce
3 level tbsp extra-light mayonnaise
5 tbsp fat free fromage frais
1 level tbsp American-style mustard
2 tbsp tomato purée
2 tsp white wine vinegar
½ tsp garlic salt
¼ tsp onion granules
¼ tsp sweet smoked paprika
Spray a large, heavy-based non-stick frying pan with low calorie cooking spray and place over a high heat. Add the beef, onion and garlic and stir-fry for 6-7 minutes or until the beef is cooked through and the onions have softened. Season well.
Meanwhile, put all the SW super sauce ingredients in a bowl with 4 tablespoons of water and whisk until well combined.
Mix together the lettuce, gherkins, onions and tomatoes and divide between four wide bowls. Spoon the beef mixture on top, drizzle over the SW super sauce and serve hot.
The simple way if you haven’t got as much time
Only 2 Syns per serving on Extra Easy
Extra lean minced beef
Pickled gherkins, chopped into slices
3 slices of Kerry low low burger cheese slices (cut into chunks) Use this as your HEA
Shredded iceberg lettuce
2 Tbsp of Kraft light thousand island dressing (This is the 2 syns as it is 1 syn per tbsp)
Cook the mince and onion, once cooked add the sliced gherkins stirring well, then add 2 slices of cheese & allow it to melt slightly. Add the thousand island dressing and the iceberg lettuce.
Top with the last slice of cheese x
