Considering I’ve felt awful all day, it’s been a nice day!! My parents have been married 34 years today, they popped round for a catch up. Dad was trying to fix something for me and mom had been and bought me a phone charger, as mine died! I was too ill to go myself lol. Parents come in so handy! My mom even made me a tea in my own house ha ha….. My newphew M came round too and chewed my ears off about games on his iPad!!! He’s obsessed and my head hurt, but he’s so flipping cute I’ll let him off!!
I then had a surprise visit off my gorgeous member H. She popped round with a thank you card and some presents for me!!! Her card made me cry!! So lovely of her.
I then made two little girls day with a signed picture from Bradley, the lead singer of the vamps! I love making other people happy 🙂 Although my bf wasn’t very happy that me my sister and my friend M kept him up till 4am, whoops!! I made an amazing dinner though so he’s fine now, food solves everything!!
I then bough a couple of nice new things online, why not heh!

Dinner. I love love love pulled pork!!!!! This is sw pulled pork in a syn free BBQ sauce. Also cake in a mug for just 1 syn.
Total time: Over 60 Minutes
Syns per serving: FREE
1.5-2kg pork shoulder, all fat removed
5 tbsp Worcestershire sauce
1 tsp mustard powder
3 tbsp balsamic vinegar
2 cloves of garlic, crushed
3 tbsp sweetener
Salt and freshly ground black pepper
In a small bowl, mix passata, Worcestershire sauce, balsamic vinegar, mustard powder, garlic, sweetener and seasoning. Transfer to a small pan and simmer for 15 minutes, or until the sauce thickens.
Meanwhile, trim and remove all visible fat from the pork and sear all sides in a hot frying pan sprayed with low calorie cooking spray. Transfer to a roasting tin lined with aluminium foil and pour the sauce over the pork making sure all the meat is covered. Cover with the foil and bake on 160°C/140°C Fan for 4-5 hours.
Remove the pork from the oven and place on a cutting board. Allow the meat to cool for approximately 15 minutes, then shred into bite-sized pieces using two forks.
Tip: Chef’s tip: Serve with homemade coleslaw, Slimming World-style sweet potato chips in 60g wholemeal rolls.
I used lean steaks all fat removed and I cooked mine in the slow cooker with tomatoes as opposed to passata.
The cake in a mug is just one egg, one tbs stevia and one tbs cocoa powder. Whisk together and microwave for one minute, serve with superfree and a yogurt.
