Food and mood

I’m in a bit of a reflective mood today. This is my status currently on fb

“Sunday motivation. Life is too short to be unhappy. If you don’t like something or it makes you said. Change it. Today is the oldest you’ve ever been and the youngest you’ll ever be again so do what will make you happy. Xxx”

This is just so true. If something makes you unhappy whether it’s your weight, relationships, job whatever. If nothing changes nothing changes.

I’ve had some great meals again this week and I’m really enjoying trying new things! Here’s some recent pics. The cooked breakfast is amaze!!! The recipe is below. I need to get ready now and do something with the rest of the day, few too many syns on voddy last night, so it’s all about the superfree!! Happy Fopping guys xxx

Classic big breakfast
Serves: 1
Prep. time: 5 minutes
Cook time: 15 minutes
Total time: Less than 30 Minutes
Syns per serving: 2

You can’t beat a big breakfast to start off the day! With juicy lean bacon and sausage accompanied by an oozing egg, here’s a classic dish, Slimming World style! You’re swapping oily fry-up for a grilled delight – and making it totally healthy too!

2 Tesco Light Choices Low Fat Pork Sausages
2 rashers of lean back bacon, fat removed
1 tomato, halved
Low calorie cooking spray
Button mushrooms, halved
1 or 2 eggs
2 slices wholemeal bread (from a 400g loaf), toasted (optional)

Place the sausages under a medium grill for 10-15 minutes or until cooked.
Place the bacon under a medium grill until cooked.
Meanwhile, spray a non-stick pan with low calorie cooking spray and add the button mushrooms. Fry the mushrooms until softened.
Place the mushrooms to one side and fry the egg in the pan. Flip the egg over if you like it well done or leave ‘sunny side up’ for a runny yolk.
Assemble your breakfast on a large plate, adding the toast and some brown sauce or tomato ketchup if you fancy it (1 Syn per level tbsp).

  1. OMG did you cook that all yourself? If you did, please call yourself chef. 😉 All those food just made my stomach grumble. That quote that you share is damn right. I love the part that today is when I am oldest and also youngest I will ever feel. The recipes that you shared were great and I will definitely try them out if my kitchen don’t get burnt down.
