Chocolate Truffle Recipe

These were seriously wow!!! Made by my gorgeous Helen xx

100g plain chocolate
100g quark
1tsp rum
1tbsp cocoa powder
Melt the chocolate (making sure it doesn’t burn). Warm the quark up over a pan of simmering water then stir in the rum. Add the melted chocolate and mix until combined and smooth. Cover and leave to cool until it starts to set. Sprinkle a plate or board with the cocoa powder. Take a teaspoon of the truffle mixture and roll into a ball then roll in the cocoa powder. They keep for up to a week in the fridge.
These worked out at 2 syns each but would be more if you make then bigger.

Bacon burgers, spicy BBQ sauce, salad and chilli chips! 

   
    
 Tonight’s amaze dinner!!!! Who needs high syn burgers!?! 

Bacon burgers 

5% fat beef mince. I used a pack from musclefood. 

Chopped smoked bacon, all fat removed

Worcestershire sauce 

1/2 tsp of mustard powder

Garlic 

Chilli powder

Smoked paprika

Seasoning 

Finely diced onion

I just mix together all of the above and bind it tightly. Cut in to four sections and re mould with your hands, or a burger press.
Pan fry each side to seal it, then spray with fry light oven bake for approx 15 minutes or till cooked through. I like mine well done so do a little longer. You can grill if you prefer. I don’t measure my other ingredients, just chuck it in to your taste. More the merrier for me. 

Chilli chips

The chips are just sprinkled with salt and chilli powder and sprayed with lots of fry light. I do mine on high again.

BBQ sauce recipe

1 onion, peeled and roughly chopped

1 tsp mild chilli powder

230ml passata

2 tbsp artifical sweetner

4 tbsp balsamaic vinegar

1 tbsp worchestershire sauce

1/2 tsp mustard powder

salt and freshly ground black pepper.

Spray a pan with fry light and sauté the onion and chilli powder over a low heat for 5 minutes until softened. Stir in the remaining ingredients, bring to the boil and simmer for 10 minutes until thickened. Season and serve.
Syn free.

Fillet steak and syn free peppercorn sauce 

Amaze Saturday night in dinner.

Sauce recipe is :-

300ml chicken stock using 2 cubes

Put in a saucepan with half a diced onion

1/2 glove of garlic

Boil

Simmer till thickens

Add 1/2tbs of Worcestershire sauce

1 1/2 tsp of crushed peppercorns

Take off the heat and add fat free fromage frais

Diet Pepsi sweet chilli sticky chicken & potato 

This was such a stunning dinner!! You’ve probably heard of diet coke chicken, well this was even better!! 

I’ve never tried it with diet Pepsi before but it worked so well!!!! 

Ingredients

Chicken breast 

Sliced veggies, I just used carrot and onion

Ginger

Chilli

Cajun spice 

Garlic fry light or a clove/sprinkle of garlic 

8 splashes of soy sauce

Diet Pepsi 330ml

A chicken oxo 

6 tbs of passata 

Method :-

Chop and pan fry your chicken in garlic fry light or regaulr fry light and a clove/sprinkle of garlic. Then add either fresh or dried ginger and chilli. Amount depends on your taste, I like mine hot!

Add finely sliced carrots, onions and whatever other veg you want. Then sprinkle on some Cajun spices. 

Fry off on a low heat.

Then mix together 330ml of diet Pepsi, 6 tbs of passata, 8 splashes of soy sauce, a chicken stock cube, seasoning and pour on to th chicken. 

Turn up the heat to high and leave it until it starts to condense down and go sticky. 

I added cubed cooked baby new potatoes to mine and served with veg. Just gorgeous!! Me and the hubby loved it!!!!!!!! 

Defo a new fav!!!!
