Haddock, bns mash, sautéed veg and creamy garlic mushroom sauce

Tonight’s dinner, it was amazing!!!! 

I had the most busiest day ever!!! Got in late but still invented this!!! 

I baked the smoked haddock.

The veggies were tescos ready chopped and ready prepared veg, ther onion, celery and carrot one and the courgetti one. Pan fried these in soy sauce.

The sauce was mushrooms fried in garlic fry light, then at the end add chicken stock mixed with a little bit of philli extra light from your healthy extra, (or syn it) and some quark. Used approx a heaped tsp of each. I used chicken melts. It is quite salty so you might not want to use all the stock. Topped with tarragon.

Easy peasy but so tasty!!!!

Set up a treat tin
‘A Syn tin is a great way to keep on track,’ says Slimming World member Marcea Watkins. Have your planned-for goodies for the week safely stashed away (out of reach of any children!), ready for when you feel like a treat. ‘Check Syns Online, write down the Syn value on each item, or stick a Syn list inside the tin lid,’ she adds. Remember, though, when it’s gone, it’s gone!

Make a grazing tray
Why have one healthy treat, when you could have two or three? Consultant Dawn Breacher suggests putting together a smorgasbord of snacks – such as sliced hard-boiled eggs and home-made Free dips with potato wedges or houmous and veg sticks, or lean meats with pickled onions and gherkins and a Healthy Extra of cheese. These should stop you feeling tempted by what your other half is having. 
Sip sangria
This pitcher of low-Syn home-made sangria (adults only!) is perfect for cocktail hour at home at just 2 Syns per serving (serves 6): stir together 200ml red wine, 200ml orange juice, 600ml diet lemonade and lots of ice. Add slices of orange, lime, cucumber and a handful of chopped strawberries and fresh mint.
Get fruity
A well-stocked fruit bowl means you’ll always have a healthy nibble on hand. ‘For a bit of extra luxury, I make up a bowl of chopped melon, mango and pineapple and keep it in the fridge, ready to tuck into,’ says Consultant Sara Fremantle.
Enjoy crunch time
‘One of my favourite crisp-style snacks are Popchips,’ says Slimming World member Ritchie Parrott. ‘All varieties are 4½ Syns for a 23g bag, so you can have something really tasty and super crunchy when the munchies strike.’ They’re also great with home-made dip. 
Tame your tipples
If you have a tendency to ‘over-pour’ when drinking wine at home (or your glass is goldfish-bowl size!) you can buy a pub-style marked glass to help keep your measures on track. Visit drinkstuff.com for lined 125ml, 175ml and 250ml glasses in various pack sizes.
Get a choccie fix
‘My favourite comforting treat is a mug of Options Belgian Choc Mint or Orange (1½ Syns per 11g sachet),’ says Ritchie. Or put your feet up with Consultant Emma Chapman’s inspired indulgence: a melted Dairy Milk Freddo (5 Syns) which she uses as a dip for chopped banana or other fresh fruit – for enjoyment, it lasts a lot longer than just eating the bar!
Keep it sweet
For a girls’ night in, Consultant Nikki McDonnell likes to spoil her mates with an ‘armchair picnic’. ‘We have low-Syn treats such as Daim or milk chocolate Mikado sticks (½ Syn each), some marshmallow Flumps (2 Syns each) and bowls of chopped fresh fruit, topped with dollops of fat-free natural yogurt. Just 10 Syns can keep us going all night!’

  

Salted caramel and carrot porridge cake 

Hi all. I’ve posted about These before, today’s was amazing!!!!!!!!! 
Basic recipe is :-

35g of porridge oats (HEB)

1 egg

2 tbs of quark of ff Greek yogurt

4 tbs sweetener or stevia

Cinnamon

Ginger

Today I added a grated carrot & 1 1/2 capfuls of salted caramel essence. 

Mix all together and microwave for 4 minutes. 

Served with quark cream and choc shot. 1/2 syn per tsp.

Carrot cake magic pancakes 

Morning all. This the recipe for my gorgeous carrot cake pancakes I had today. They are sooooooooooo good!!!!!! 

Mix together the following :-

35g porridge oats

A heaped tbs of fat free yogurt or quark 

3 tbs of stevia/sweetener 

A capful of almond essence

Tsp of cinnamon & ginger 

1 egg

1 grated carrot 

Heat a frying pan with frylight & spoon in the mixture, then place under the grill or flip.

Drizzle with choc shot for 1/2 syn. 1 HEB x

I’m thrilled my new experiment worked sooooo well!!!!! 
If you follow my page you’ll know I love to experiment. I’ve done ZOATS, carrot cake, ZOATY pancakes and loads more weird and wonderful creations. I’m really opened minded when it comes to food, if it tastes good and it’s healthy I love it!!

I’ve seen various cakes made with butternut squash and was really intrigued!! Bns is sweet, soft and moist, so I can see why it would work. It’s also a speed food!!! The courgette works amazingly in the porridge as does carrot, so I decided to give it a whirl!! Love love love it!!!!!! So many recipes sound weird but taste amazing, see what you think!! 

Ingredients

Butternut squash 

Stevia (4 tbs)

An egg

Salted caramel flavouring (1.5 capfuls)

4 scan bran (I’d usually use 5) 

2 tsp of choc shot, any flavour. I used coconut. (1 syn) 

Peel some bns & microwave it until soft, approx 10 minutes. Then mash. I didn’t weigh it, but it’s about a 1/4 of a squash. 

Break up the scan bran and blitz in a food processor. 
Soak this in boiling water, don’t add too much or it’ll go mushy. Just enough to cover the scan bran. 
Add the other ingredients, inc the squash and blitz for 5 seconds. 
Pour in to a microwaveable tub and microwave for 5 minutes, the cake should come away from the side. Slice and serve with drizzled choc shot, cinnamon or sweetener and some fruit for more speed. Lush!!!!!

Date night before the stag and hen! 

Morning all! Actually it’s afternoon now isn’t it!! Done nothing except eat and watching tv this morning. We started off with a lovely cocktail at turtle bay, I wanted a gin and slim but they didn’t have slimline tonic! So I allowed myself one cocktail, it did have passion fruit in so it was sort of healthy lol 😉 
Then we went to a launch party of a new salon. My salon I go to in Warwick has opened a new one in leamington, it’s stunning!!!!! Check it out if you’re local. Nash white opposite cafe rouge. Had a little prosecco there. 
We then went to the restaurant, it’s a south Indian one called Kayal. The website said it’s healthy good food and it was! I had the Nadan Kozhi Curry. It’s boneless chicken cubes cooked with mustard, ginger, garlic and special home made spices. It does come with potato too, but I didn’t have that. I asked for as little oil as possible to be used and they were so good about it. I was going to have a biryani but they were really honest and said the rice was cooked in a lot of ghee. It always pays to ask or make changes, don’t be shy as you’re the customer. You couldn’t see any nasty oil oozing out like some curries and the chicken melted in your mouth!!! I had a gin and slim, then we shared a bottle of sv. 
We then ended up in another bar, then on to a club/bar. Stuck to gin and drank loads of water in between too. God we felt old in the last place!! Everyone was so young and soooooooooo drunk!!! It was fun though. We called it a night but then ended up in the kitchen drinking small bottles of beer & having d&m, (deep and meaningfuls), while listening to all of our wedding songs and watching our band on YouTube! When my h2b started trying to make a cocktail out of vodka, milk and squash, as that’s all that was left, I went to bed! We don’t do it often, so I’m not going to beat myself up.
Straight back on it today with a yummy cooked breakie courtesy of musclefood. Speed speed and more speed needed this week. I’ve got my hen do a week Friday so need to pull it back!! 
Here’s a few pics of our evening. I put one on Instagram last night and I had some lovely comments, it really boosted my confidence. When you’ve been bigger you are still insecure and self critical. Last night I got in a size 8 skirt and actually felt ok!! To then get lovely comments makes you think actually I should be more confident so thanks to all those lovely people, mwah. 
I’m currently watching X factor in my pjs trying to find some sort of motivation to get up and go shopping!!! I look like a gremlin lol!! I need quark though so I might have to crawl off the sofa and have a bower! That’s a bath/shower when you can’t be bothered to stand up!!!!

Blackcurrent & almond zoat pancakes & peanut butter cream. 1 syn

OMG these were amaze!!!!! 

I just mixed 35g of oats, 1 tbs of stevia, some sugar free squash, a tbs of fat free yogurt or quark, an egg and some almond essence. For added speed a added half a grated courgette from my ZOATS recipe. 

I just cooked them in a hot frying pan with fry light and grilled the top. Add an extra egg if your prefer them fluffier. 

The cream is simply a tsp (6g) of peanut butter powder made in to a paste with a little water. Then mix it in with quark or ff yogurt. Tip on top of your strawberries and sprinkle with cinnamon.

French toast heb and syn free

Whisk together 2 eggs, 3-4 tbs of stevia, a tsp of cinnamon and whatever flavouring you like, eg vanilla essence, I used millionaire shortbread from cupcake world. 

Dip 2 slices of wholemeal bread from a 400g loaf and cover both sides. (HEB)
Heat in a hot pan and turn over or grill the other side.

Serve with berries, stevia and more cinnamon or choc shot for 1/2 syn per tsp.

Piri piri and paprika pork. Dessert strawberry fruity blancmange 

Evening all. Tonight’s lovely food recipes for you :- 

Piri piri and paprika pork. 

Ingredients

4 thick pork loins, all fat removed

Garlic fry light (can use regular)

2 onions, chopped. I use 1 red and 1 white.

Free vegetables of your choice, I used carrots, peppers, broccoli and green beans

1 & 1/2 cartons of passata

2 tbs of Schwartz Piri Piri Seasoning. It does have quite a kick!! 

2 chicken stock cubes

A tbs of smoked paprika

Mixed herbs

Salt and pepper

Method
Preheat the oven to 180°C. Seal the pork in a frying pan and onions, then place in a large oven tray sprayed with garlic fry light. 

Roughly chop your vegetables and throw in the tray.

Boil the kettle and place passata, salt and pepper and the stock cubes into a large jug. add the piri piri seasoning and paprika. Add approximately 50ml of boiling water and stir until the stock cubes have dissolved.

Place the pork in the tray, and then pour over the seasoned tomato mixture. Sprinkle with mixed herbs. Place in the oven for around 25 minutes. 

I served mine with butternut squash mash, topped with a little light primula cheese from my a choice. 
Dessert. Strawberry fruity blancmange:-

1 sachet of sugar free strawberry jelly made up with 1/2 pint of boiling water, add a sachet of gelatine and mix well. Add just under 1/2 pint of cold water, frozen mixed berries and a heaped tbs of fat free quark, or yogurt, mix and pop in a jelly mould. 

Leave to set in the fridge for about an hour. Serve with more fruit and fat free quark mixed with stevia Nd vanilla essence. Jelly, fruit and cream!! The sachet is 1.5 syns so less than 1 syn if you spilt between 2.
