BBQ pulled pork 

Hi all. 
I have to share this beautiful recipe!!!! I like to adapt things slightly, so this is my version. 

ingredients
4 pork steaks, all fat removed

5 tbsp Worcestershire sauce

1 tsp mustard powder

500g passata

3 tbsp balsamic vinegar

2 cloves of garlic, crushed

3 tbsp sweetener

Sprinkle of chilli flakes

Salt and freshly ground black pepper

method

In a slow cooker add the pork steaks, passata, Worcestershire sauce, balsamic vinegar, mustard powder, garlic, chilli, sweetener and seasoning. 

Leave on high if starting it in the afternoon, or medium if all day.

Once cooked through, mines on all day, pull the pork apart. 

Serve with lots of veggies if on eesp, ee why not make some fries or have over a jacket potato with salad? Or save your HEB for a roll. 

You can do a version where you bake the pork in the oven, then make the sauce separately in a pan until it thickens. 

It’s sooooooooooo good!!!!!!! Yet syn free!!! It’s quick, easy and just cook it!!

Zoatcakes

Morning all. 
The ZOATS, zoat pancakes and magic oatcakes have all become very popular. This version is minus the oats, adding oats too to me is a lot of food that I dint need. I’d rather either have ZOATS and then eggs for lunch, or have these then save my HEB for later. It’s all free foods or healthy extras but I’d rather not eat extra food when I dint need to. These are filling enough for me. I save magic pancakes for the weekend.

Recipe :- 

Mix together a tbs of quark of fat free yogurt if not on eesp, 1/2 a grated courgette, 3 tbs of stevia or sweetener, 2 eggs and then you can also add any flavouring you’d like to, or make without. Lemons nice, or vanilla.

I have mine with cinnamon and berries. You can also add chocolate powder if you fancy chocolatey zoatcakes. 

Heat the pan till it’s really hot with fry light, then spoon in the mixture and either flip, or grill the top. Your other option is to do just ine big zoatcake.

Cake in a mug 

Hi all, do you have days where you just need cake!?! I don’t like to make all these weird recipes with a thousand eggs and five tubs of sweetener. It’s a lot or food and I’d be too tempted to eat the lot!! These 1/2 syn roulades etc are actually a tweak of the plan anyway. It can harm your weight loss. This recipe however is just the egg. Just remember to always add your 1/3 rd speed foods for the best results. I had berries and lemon cream with mine. This is just stevia, quark and Sicilian lemon essence. 
It’s very simple :-

Whisk together with a fork in a mug the following :-

1 egg

1 tbs stevia or sweetener 

1/4 tsp of baking powder

1 tsp of cacao powder or cocoa powder (1 syn for my brand, even nicer with a tbs but count 2.5syns then)

1 tbs of almond milk from your healthy extra 

Once whisked microwave in the mug for 1 minute, if it’s not fully risen try another 20 seconds. It doesn’t look pretty but it’ll do the trick. You can make savory versions too. See below for other alternatives. 

Fruity porridge
First up we have a recipe for perfect porridge – central heating for the soul! Our microwavable version is tasty, ready in 3 minutes and cooked all together in one coffee mug!
In a large microwave-safe mug add 35g porridge oats (Healthy Extra ‘b’ choice) and 100ml milk from your allowance (Healthy Extra ‘a’ choice), and give it a good stir. Pop it in your microwave and heat on full power for 2 minutes, remove and stir again. Return to your microwave and heat on full power for another minute. Sweeten to taste and allow it to cool for a couple of minutes before you sink your spoon in.
Tasty toppings…
Fat-free natural yogurt and mixed berries with 1 level tsp runny honey (1 Syn)

Fresh mango and chopped banana sprinkled with 1 level tsp desiccated coconut (1½ Syns)

Chopped strawberries and 1 level tsp reduced-sugar jam (½ Syn)

Top tip: To avoid a messy microwave, you definitely want a mug that’s tall or wide (or both!).
Quiche in a flash
Would you believe us if we said that you can make a really tasty quiche in under 2 minutes? Well, here goes…
Spray the inside of your large microwave-safe mug (the bottom and the sides), with low calorie cooking spray – less than one calorie per spray (this will stop your egg sticking to the sides!) and crack one or two eggs into it. Add your fillings (more on that below!), season and whisk together. Pop into your microwave and heat on full power for 2 minutes – voila!
Feast your eyes on these fab Free fillings…
Ham and tomato – add 30g Cheddar (Healthy Extra ‘a’ choice) for a cheesy version!

Spring onion, sweetcorn and peppers – a veggie delight!

Make a basic egg quiche and top with slivers of smoked salmon

Top tip: To make your washing up a doddle, squirt your empty mug with washing up liquid, fill it with hot water, and let it soak for a while.
Perfect pasta and noodles
I’m not a big fan of Mugshots, but they are warming, filling and ideal for popping in lunchboxes, plus most flavours are Free. They’re great for a satisfying bite if you’ve got a mug and kettle close by. On Syns Online you’ll find a full list of their Syn values.
Make yours extra filling by throwing in Free Foods…
Chopped chunks of ham or chicken for a meatier snack

Tuna canned in brine or spring water is delicious stirred through a tomato-based sauce

Make yours a veggie feast with added tomatoes, pepper, spring onions, sweetcorn and mushrooms

Chocolate cake in a cup

For a chocolaty dessert that’s ready in under 2 minutes, tip an Options hot chocolate into a mug, crack in one egg and add 4 tsp sweetener. Mix it all together and heat in the microwave on full power for 1½ minutes. With hot chocolate flavours including Turkish delight (1½ Syns), caramel (1½ Syns), mint (1½ Syns) and Belgian (2 Syns) – the possibilities are endless!
Top tip: Since microwaves vary, you might need to tweak the time it takes to cook the contents of your mug.

Mexican chicken fajitas 

Evening all. This dinner was amazing!!!!! 

Chicken fajitas, courgetti noodles, stir fry and salsa. 

Here’s the recipe which serves 4, or 2 if you like your food like me!! :- 

Ingredients

1 red pepper, halved, deseeded and finely sliced
1 green pepper, halved, deseeded and finely sliced

2 medium red onions, halved and finely sliced

2-3 skinless boneless chicken breasts, cut into chunks

1 tbs smoked paprika

1 tbs cumin

2 fresh red chillies, deseeded and finely chopped

Juice of 1 lime

Low calorie cooking spray

Salt and freshly ground black pepper

For the salsa

½-1 fresh red chilli, deseeded and finely chopped

15 ripe cherry tomatoes, halved

Small handful of finely chopped coriander

Salt and freshly ground black pepper

Juice of 1 lime
Method

Spray a non-stick pan with low calorie cooking spray and place over a medium-high heat. Add the peppers, onions, chillies, lime juice and spices and stir-fry for 4-5 minutes. Add the chicken, then stir-fry over a high heat for 5 mins until the chicken is cooked.

Meanwhile, tip the salsa ingredients into a food processor, along with the lime juice and a little seasoning and pulse until finely chopped. Or you can hand chop. 

The courgetti is just own fried in fry light and a little bit of soy sauce.

Perfect eesp meal.

Tuna, feta and freekeh salad!!! Gorgeous lunch!!

Hey all. 
OMG I’ve just had the best lunch!!! Had to share it!!!! It’s adapted from the cous cous recipe in the current sw magazine. I’m not a fan of cous cous, I prefer higher protein grains, like quinoa. I spotted this new product in tesco today and thought I’d give it a whirl. It’s called freekeh. I’ve never tried it before, I checked the app and it’s free!! 

Ingredients:-

Fresh basil

Freekeh 50g

250ml of boiling water

Spinach

Chunks of red onion

Vegetable stock

Seasoning

Tuna

Garlic clove sliced

Tomatoes

Peppers

Balsamic vinegar 

15g of feta (healthy extra or syn)

1. Bring the freekeh to the boil with 250ml veg stock, simmer for 15 minutes. 

2. Roast the tomatoes, onions, peppers and garlic, along with a tbs of balsamic vinegar. 

3. Wilt 200g of spinach, drain, squeeze out the water, set aside. 

4. Add the spinach, roast veg, seasoning, another tbs of balsamic vinegar, tuna and mix together with the freekeh.
5. Squeeze over some fresh lemon juice and add the basil leaves.

Eat!!!! Yummers!!!!

My 5lb off week xx 

Hi all. So if you follow my fb page or Instagram, you’ll know I was over the moon with my 5lb weight loss last week. I needed it after my holiday!! I lost my holiday weight and more. Thrilled!! 

A lot of people have asked what I changed or what I followed, so here it is!! 

1. Eat clean. Which is basically keeping things really simple and basic. Not adding lots of food to food, if you know what I mean. There’s so many recipes for cakes, muffins, pancakes etc. all of which I like and yes they are free, but it’s still a lot of food I don’t need. 

2. Stop when I’m full. I love food and end up over eating a lot! I’ve reduced my portion size and if there’s leftovers they’ve gone in the fridge, instead of my mouth!!! I’ve had less quark too, which is hard for me!!! I’ve spilt a pot over lunch and dinner. Again, it’s free, but I feel I eat beyond being full. I’ve been splitting a tub at lunch and dinner. 

3. I Varied my healthy extras, had things I’ve never had before. Flaxseed, chia seeds and just varying porridge, eggs, weetabix etc for breakfast.

4. I’ve drank a lot more fluids. I’m usually rubbish at this!!! I believe this made a big difference as I didn’t feel as hungry. 

5. Snack on melon or cucumber rather than hi fi bars, yogurts etc…

6. Planned meals and prepared in advance.

7. I would eat before I went out, I had a funeral, christening and an all day girls day/night out. This protected me from all the Buffett foods. I also drove so no alcohol. 

8. I looked at the menu for the restaurant Saturday before hand and choose really well. Asked for plain new potatoes, which weren’t on the menu, but they didn’t mind at all. Grilled salmon and a salad. I also stuck mainly to gin and slim, with a few beers and pimms. I drank water inbetween drinks. 

9. Car snacks. On the way to the church I bought some chicken breast, sushi and fruit.

10. Did extra easy over the weekend and then mainly eesp through the week.

11. Then I went to the gym Monday Tuesday and Wednesday. I did 4 classes in those 3 days. 
So that’s it!! It’s all just following the plan, being in control and pulling it back after a slightly flexible Saturday. 

We all have the Same books, tools, support, it’s about our choices. I said out loud in group I wanted 4lb and I committed to my steps. If I say I’m doing something I do it. I posted on our fb support page, this helped too. Then I also set a goal and time framed it. I feel so motivated and excited about getting back to target!!!

Chia seed dessert 

Hi all, 

How are we?? I tend to post on my fb page more regaulry then on there, then I remember some of you don’t do facebook or Instagram. 

This is a new dessert I’m liking, mega healthy and something a bit different. 

Chia seeds can be a healthy extra or syns. 30g is a HEB or 25g is 5 syns.

I’ve done a blog on the health benefits already. 

This dessert is simple. Soak some chia seeds in almond milk, ( you can use any healthy extra milks, chocolate would be nice!), sweetener or stevia and some flavouring or essence. I like vanilla or white chocolate and strawberry from cupcake world. Then mix together and add to a glass. I layered quark mixed with sugar free squash and berries. It keeps you full for hours!!!!!!!!

Costa Adeje

Costa Adeje 

Im writing this on the plane on the way home. Sitting reflecting on a lovely holiday. 

It’s been about 5 years since I’ve been able to enjoy a “proper” holiday because of stupid vertigo!! I’m so happy to say this time I was fine!! We went away as a. Test, I need to know if I’d be ok before we book a honeymoon. The sun makes it worse, so I drank tons of water, stayed off caffeine for a while, took antihistamines, used the amazing ear planes on the flight and just tried to stay really calm. I’m sure it’s the ear planes that do the trick!! I get mine from boots. 

We did quite a bit of research to find a nice hotel and it was so worth it!! We stayed at the H10 costa adeje palace. It was beautiful!!!!! They’ve got a spa, a gym, a stunning pool area, a lovely restaurant and really gorgeous modern rooms. I was really impressed!!! I always leave it to Chris to book the hotel so I’m not responsible if we don’t like it!! He’s way better at it than me!! I get impatient looking and just book anything!! He reads reviews, compares a million websites and googles tons of info about the surrounding areas too. Men come in so handy on holiday don’t they!! They carry the heavy stuff, navigate everywhere, get you drinks when you’re boiling and just generally look after you. Well mine does anyway. I have zero sense of direction!! I’d never of visited all of the palaces we did if it wasn’t for him. He’s the perfect holiday partner, love him so much!!! 

We went half board, breakfast was gorgeous!! Tons of fruit, fat free yogurt, omelettes, cereal, porridge, boiled eggs, then the usual fatty bacon and weird willy looking sausages lol!!! They also had a huge bread selection and crepes!! I had these just the one day and they were amaze! That pleasure though just lasts seconds doesn’t it!! I was annoyed with myself after and swore I wouldn’t have them again! 

Then we decided to swop and have lunch to save venturing out and about in the day, disturbing sunbathing!! I always over eat at buffet style restaurants!! I can’t help myself!!! It’s literally like an addiction!! I walk in and immediately feel stressed as there’s too much choice, I’d hate to miss anything!!! So I do a reiki and plan out my route. I watch others with a sparrows portion of food and can’t get my head around it!!! But that’s why they’re naturally slim and I’m not!! Chris calls me nikki two plates he he. I tried to get him to tell me I didn’t need that second plate, but oh no!! Off I go!!! I can only compare it to an alcoholic in a bar or a sex addict at a brothel!!! It’s a compulsion!! This is why I have to eat healthily as I eat too much!!! This is why I love slimming world though because you can!! (No offence intended here)

We didn’t hardly do any exercise, just a bit of walking at night to the restaurants and bars and a bit of swimming. Every year I think about taking my trainers and gym gear, every year I don’t!!! I went for a massage one day and saw people working out, I felt guilty….. For about two seconds!! The massage was heaven but a bit weird!! She started by washing my feet!?! After I felt a bit light headed and got really worried I was getting vertigo again, but luckily it passed. 

We had some amazing food!!! I really did try to make good choices. I’d swop chips for rice, I’d order side salads to fill up on, I didn’t order desserts, or have starters or any bread. Everything’s cooked in oil though isn’t it!! They don’t understand sauce on the side and they don’t have slim line tonic for some reason. Do you do that thing where you order your food, then try and influence your partners decision so you can try there’s too lol!!!! Do you also do the sly stare game?!? Where you try and secretly look at everyone’s else’s meals, just in case it looks better than yours!! You pretend to flick your hair, or look at the waiters, when really you’re just salivating at their food, food envy!!!!. Rather than waste syns on drinks I don’t really like, the ones I just drink because they’re lower in syns, I had multiple beers and cocktails and the odd glass of wine. The cocktails were unreal!!!!! Cosmopolitans, mojitos and my favourite coco loco were the most popular choice with me. How come the beer tastes so much better abroad!?! 

My favourite meals were fillet steak, which I had twice. Once with a mushroom sauce which was pretty creamy but spectacular, the other with a gorgeous jalapeño salsa. I also really loved the chicken fajitas, I didn’t eat all the wraps, just had it with loads of salad. The amount of chicken they gave me would of feed both of us!! I still ate it though!!! You just can’t beat fillet steak can you!!!!! The best restaurant for tasty food was Restaurant La Brasserie, Costa Adeje. It’s on the sea front. They use a BBQ style grill so everything tasted amazing!!!!! Chris had a gourmet burger here too and he loved it!!! Really nice friendly staff too. Check it out. All the restaurants by the sea were beautiful.

There’s loads of lovely bars and places to get a drink. I loved the fun moon bar, this is a proper English style casual pub. It was great though!!! They had karaoke, a fantastic duo act who sang all up to date songs and had great personalities!!! One guy rapped and the other sang. It was brilliant!!!! I love watching people do karaoke!!! It’s a childhood thing, I used to sing a lot but not anymore!! The nicest bar was papyagaya in playa de las Americas. It’s really got the wow factor!!! I got a bit of abuse on my blog as I said I wouldn’t go back to playa!! It really wasn’t nice. However I didn’t want to offend anyone, it was just my personal experience of this particular part of Tenerife. Im sure there’s lots of gorgeous places in playa, this area isn’t one of them!! We had just got out of the taxi and there was woman in the street with her underwear pulled down, put it this way, she wasn’t just doing a wee!!! I couldn’t believe my eyes!!!! Everyone was so shocked, she didn’t care!! She just got back up and carried on standing there!! It’s such a shame as the bar is simply stunning!!!!!!!! We tried to find somewhere nice to eat around here but we couldn’t. We got stopped a thousand times getting offered sunglasses, watches, and to have my hair braided!?! No thanks lol I’m not 12!! There was another really scary hammered guy acting like an actual monkey!! The whole thing freaked me out, I just didn’t feel comfortable at all. This is just my personal opinion and like I said I’m sure there some gorgeous parts. Just avoid this bit! 

So overall it was a fab holiday!!! Just five days but five wonderful days!! It now means we can go ahead and plan our honeymoon!!!

Papaya tastes like feet!!!!

I don’t like things inbetween my toes!!!

Apparently men don’t understand colours that us women do, i.e. the colour teal. Ha ha

If there’s tablecloths on the table at restaurants it means it’s nice, if not, it isn’t. 

Sunburn, what’s that about!! Why do you always miss the bits by your bikini line or boobage area?! I swear I need a spray tan version of sun cream!! How good would that be!!
