I forget how gorgeous this is!!! Here’s my version :-
Cook off the chicken breast chunks in fry light with fresh ginger, garlic and chilli.
Add large chunks of onion, peppers and mushrooms till they start to soften.
Mix together 330ml of diet fanta (or any other syn free diet fizzy orange drink), 6tbs of passata, a chicken oxo cube, a tsp vinegar a few splashes of soy sauce and a few splashes of worcestshire sauce.
Let it bubble away on high for around 20 minutes until it starts to thicken up and go sticky.
At the last minute you can add some fresh pineapple chunks (free), or tinned and count syns, I didn’t as did eesp today.
Serve with stir fry, rice syn free chips or cooked dried egg noodles. I had a Chinese five spice stir fry and h2b had chips and stir fry.
