Banana and carrot cake pancake

Wow my breakie this morning was gorgeous!!!!!!!! To be safe and to protect your losses you should always syn cooked or mashed fruit. It’s up to you if you do or you don’t, I’m not going to debate it. I’d advise my members to as that’s what it says in iur sw books, website and app, it also explains why online too.

A mashed medium banana is 4 syns but as I used half you’d syn this at 2 and 1/2 for the choc shot. It’s gorgeous! Leave the carrot out if you prefer, it just adds more speed foods. 

Grate a carrot and mash 1/2 a banana the mix it in with 2 beaten eggs, 3 tbs of stevia or sweetener and a large tbs of quark or fat free yogurt, and a sprinkle of cinnamon. 

Heat a large pan and cook as one big pancake or individual ones. I grill the top.

Served with mixed berries and a tsp of coconut choc shot. Heavenly 🙂

  1. I love healthy pancakes! I made one with just a small sweet potato (bake it night before then scoop it out in the morning) and an egg, with a bit of vanilla essense. Topped it with raspberries, greek yoghurt, maple syrup and peanut butter mmmm
