A wonderful Saturday 

Hi all!! I hope you’re having a fab Sunday 🙂 
I had such a fab day yesterday!!!! I met up with a sw friend, who’s now defo going to be a good friend and we went to Coffee Architects in leamington for lunch. This is my fav coffee shop in the entire world as they have so many healthy options, even healthy cakes!!!! They do loads of gluten free and paleo items too. 
We went for the salad plate with chicken, there’s a wide variety of salad bits behind the counter and you can choose what you’d like or just ask for a bit of everything. You’ve got things from large mushrooms filled with home made hummus, healthy quiches, loads of speed foods and we added chicken. A nice big plate of healthy food for zero syns!! I usually go for the healthy brownies, but they had a ginger and lemon muffin yesterday so we had one of those each with berries. OMG it was incredible!!!!!!!!!!!! A normal muffin can range from 20 to 30 syns, even for the skinny ones! This worked out at just 6. We had 2 de cafe coffees with skimmed milk and my friend agreed that the coffee is just fantastic!!! It was such a nice day too, you feel like you’re in a cool little place in London or Bournemouth in this gorgeous shop. If you’re local to leamington I’d highly recommend it!!! It is extremely popular so if you go at a peak time, please be patient, they all do their best to get you seated and served ASAP. Or alternatively you can grab a take out. 
After that I took my friend to my local, it was really lovely as ended up seeing my sister and some of my other friends too. We had two glasses of medium wine and some water, then stopped there and came back to mine for a coffee and more catching up, it could of got messy, but we refrained!! I only know Tracey through mutual friends and slimming world, but we knew we’d get on really well and we’ve just hit it off and are so alike!!!!! I can see a beautiful, but wild friendship ahead of us!!! 
Chris really wanted to go for a curry later on, so we headed down to a place called Warwick Spice. Wow it was just gorgeous!!!! I asked for zero oil or ghee and they happily obliged, they did try and say ok no problem, we’ll just use a little bit, I was like er no I can’t eat any oil or ghee I’m afraid, so they just used a bit of water. I explained I worked for sw and they were great, they did me a gorgeous salad too. I had chicken dansak… Standard! 1/4 of Chris’s boiled rice and the salad. They were joking when the popadoms came out saying they were watching me, but I didn’t touch any anyway. I had 2 gin and slim line tonics, then came home for fruit and quark. It felt so good today not having a hangover!! Although the day was slightly flexible, it was way better than previous weekends. My problem is never food syns it’s alcohol!! I did pretty good though 🙂 
I’m like a zombie though today as I was up bloody coughing all night!! I’ve got a really sore throat and can hardly breathe!! I’ve gargled salt water, used a throat spray and keep drinking lots of fluids, if you’ve got any other suggestions let me know. I might try a glass of measured red wine later, see if that works 😉 I never ever drink mid week so it’s nice to relax and have a couple at the weekend I think. I had to do a quick dash to tesco as Chris did the shop this week and got me four lots of quark, four lol, that’ll last me 2 days max!! I saw so many sw members, thank god my basket/trolley is always sw!!

Blueberry, cinnamon, ginger & millionaire shortbread oaty cookies!! 

These were gorgeous!!! I first made them years ago and I’ve posted about them before. This recipe is probably my fav version so far!! These are a lovely weekend treat.

The basic recipe is this :-

35g of oats as your HEB

1 egg

3 tbs of stevia of sweetener (you can add less if you don’t like things too sweet) 

Spray a non stick baking tray with fry light and spoon out the mixture in to three cookies/biscuits.

Place in a pre heated oven at 200 degrees and bake for approx 10 minutes.

I added 1/2 tsp of ginger, a sprinkle of cinnamon, some blueberries and some drops of millionaire shortbread flavouring from cupcake world. Flavourings are syn free so you can play about with all the different varieties. Sw guidelines state that cooked ruin should be synned. Totally agree with this as a consultant as it’s very very easy to over consume fruit when blended or puréed. I’ve only added a small handful, 100g is 1 syn and there’s no where near 100g in here, so the syns would be negligible anyway. You can try adding a sachet of options or choc shot for chocolate cookies, or chocolate chips, mini marshmallows, or any other fruit. Exciting!!! 

I had mine with some speed food berries and quark mixed with sugar free squash. 

I’ve got a fab day planned!! I’m off on a lunch date with a sw friend then out later with my h2b for a date night. Well that’s the plan!! The footballs on though isn’t it, so we’ll see!! I really want to see that new film with the rock in too! Might save that for tomorrow. I always find if you want to stay on track over the weekend it takes a bit of planning. I’ve already decided what I’m eating today and how I’ll adapt it to be food optimising friendly. I’m also planning on not drinking much either! Wish me luck 🙂

Fillet steak, bns chips, mushroom, vegetables and creamy horseradish cabbage

This is literally one of my favourite ever sw meals!!!! My h2b cooked it for me for our first valentines and we’ve loved it ever since. It’s a perfect treat might Friday dinner. All of this is only 1/2 syn!!!!!!!! 

The fillet steak is pan fried with fry light in a griddle pan, just seasoned with pepper.

Syn free bns chips is just a butternut squash chipped and oven baked with salt and fry light. He had proper syn free chips with his, thick cut.

Vegetables were boiled.

Flat mushroom also cooked in the griddle pan.

Then the best bit!!!!!!!!! The cabbage side!!!!!!!!!!!

Pan fry off sliced Savoy cabbage with garlic, rosemary and onion. Then add 200ml of beef stock, cook off. Take of the heat and add fat free fromaige frais mixed with a tablespoon of horse radish, which is 1 syn (check your brand), so 1/2 per serving. Heaven on a plate!!!!!!!

Then I’m proud to say I measured 175ml of red wine. Gorgeous.

Sweet and sour fanta chicken amaze!!! 

I forget how gorgeous this is!!! Here’s my version :-

Cook off the chicken breast chunks in fry light with fresh ginger, garlic and chilli.
Add large chunks of onion, peppers and mushrooms till they start to soften.

Mix together 330ml of diet fanta (or any other syn free diet fizzy orange drink), 6tbs of passata, a chicken oxo cube, a tsp vinegar a few splashes of soy sauce and a few splashes of worcestshire sauce. 

Let it bubble away on high for around 20 minutes until it starts to thicken up and go sticky.

At the last minute you can add some fresh pineapple chunks (free), or tinned and count syns, I didn’t as did eesp today.

Serve with stir fry, rice syn free chips or cooked dried egg noodles. I had a Chinese five spice stir fry and h2b had chips and stir fry.

Millionaire shortbread magic pancakes

Morning!!! Check out this beaut breakfast I made today 🙂 I usually have my carrot cake pancakes but I’m at a christening at 12pm today and possibly a food festival after, so needed something really filling. These include your HEB of oats which will help. 

Simply mix together 2 eggs, 35g of oats, a tbs of either quark or yogurt, plain or flavoured, 3 tbs of stevia or sweetener and a few drops of millionaire shortbread flavouring. Mine are from cupcake world. 

Fry one side in a hot pan, then flip and serve with 1/2 syn of choc shot, berries and cinnamon.

Singapore noodles 

Hey all. Well here’s another gorgeous recipe for you!!! I’ve been missing Chinese now the syns are so high so rather than a take we did a fakeaway!! We had ours with a side serving of pak choi and spring onions with garlic, ginger, chilli and soy sauce.

Singapore Noodles

Here is a recipe from October’s Slimming World magazine that I’ve decided to put on here for ease of access. I decided to add some chicken and prawns, as well as the recommended pork, in order to make the dish more like one you’d get from the takeaway!

Serves 2
Extra Easy
Ingredients
2 Sharwoods dried egg noodle nests

2 lean pork loins, fat removed and sliced into strips (we didn’t add pork) 

2 chicken breast, cut into chunks 

Handful of King Prawns 

1 onion, sliced

1 red pepper, sliced

Handful of mangetout, sliced 

Small bunch of Spring Onions, diced

100g beansprouts

2 garlic cloves, finely chopped

1 tsp Ginger, finely chopped

1 red chilli, finely chopped

1 tbsp mild curry powder

1 tsp tumeric

1 tbsp Sweet Chilli sauce (syns range from 0.5 to 1.5 depending on the brand) 

3 tbsps Soy sauce

2 eggs, beaten (optional, we left out) 

Frylight

Method
1. Cook the noodles according to the packet instructions.

2. Stirfry the pork and chicken in a wok sprayed with frylight until cooked through, and remove from the pan.

3. Respray the wok with frylight and stirfry the onion, red pepper, mangetout and spring onions until softened. 

4. Add the garlic, chilli and ginger and fry for 1 minute.

5. Add the curry powder and tumeric and stirfry for a further minute.

6. Add the pork, chicken, prawns, beansprouts, noodles and 2 tbsps water to the wok and mix through. Then add the chilli sauce and soy sauce and stirfry for 1 minute.

7. Push the mixture to one side and pour in the eggs. Stir them continuously until they are scrambled and cooked through, then combine with the noodles.

   
 

Banana and carrot cake pancake

Wow my breakie this morning was gorgeous!!!!!!!! To be safe and to protect your losses you should always syn cooked or mashed fruit. It’s up to you if you do or you don’t, I’m not going to debate it. I’d advise my members to as that’s what it says in iur sw books, website and app, it also explains why online too.

A mashed medium banana is 4 syns but as I used half you’d syn this at 2 and 1/2 for the choc shot. It’s gorgeous! Leave the carrot out if you prefer, it just adds more speed foods. 

Grate a carrot and mash 1/2 a banana the mix it in with 2 beaten eggs, 3 tbs of stevia or sweetener and a large tbs of quark or fat free yogurt, and a sprinkle of cinnamon. 

Heat a large pan and cook as one big pancake or individual ones. I grill the top.

Served with mixed berries and a tsp of coconut choc shot. Heavenly 🙂

Diet coke chicken!!!

Yes you read that correct 🙂 

If you haven’t tried this gorgeous recipe, give it a go!!! It’s a like a sweet sticky chilli chicken dish, but syn free!! I do mine slightly different and I personally think it’s the best version 😉 
Fry off a couple of chicken breasts in garlic, ginger and chilli. 
Add chopped mushrooms, peppers and onions and fry it all off.

Mix together 330ml of diet coke 
6 tbs of passata 

8 splashes of Worcestershire sauce ( I don’t count, just whack it in!) and

A chicken oxo cube crumbled 

Stir and pour over the chicken. 
Turn the heat up high and leave to boil away. You’ll see it slowly condense down, Leave it until it’s at your desired consistency, remove from the heat and serve.

I had mine with cauliflower rice and a large salad. Gorgeous!!!!!!!!! 

I’m slightly stressed at the moment with house hunting, cars and weddings!! Could do with a lottery win! Why do people say this when they don’t actually play ha ha, I’m not going to randomly find a ticket in the street and win a million am I lol!!! I’ll just keep working hard and stay confident what’s meant to be will be. Just could do without it all coming at once!!

What do to with quark 

A really common question I get asked is what do I do with quark.  If you follow my blog or if you know me, you know I love quark!!!!! My all time favourite is the tesco one. It’s soooooooooo thick and creamy!! I adore it!!!

My top favs are :-

Mix a tub of quark with a sachet of options and a bit of stevia. Praline, mint or choc orange are my favs!!!

Mix it with some double concentrated sugar free squash and a pinch of stevia. Tastes just like a deluxe yogurt!

Mix it with stevia and flavourings, Sicilian lemon essence from tesco is heavenly!!!!

Use it for a sauce on lasagna. Mix it up and smooth it over your layers then add your hea of cheese.

For dips. Millions of tip ideas on the sw website.

In chicken supreme, recipe is on my blog or the sw website. 

Mix with a white chocolate options and serve with berries and a small crushed meringue for a low syn Eton mess.

Caribbean pepperpot stew 

OMG!!!! This was AMAZING !!!!!!!!! It’s the first time I’ve ever made it, it’s nowonw if my favourite ever sw recipes !!!!

Chris’s exact words were. “Well that was f***ing amazing !!” So I think he liked it he he. 

It’s super easy, would work in a slow cooker too. Just make sure all the visible fat is removed from the beef. Next time I’d add more speed food I the dish too, onions and mushrooms would be lovely. Enjoy x

Jamaican classic – who says jerk seasoning is just for the 

Ingredients

  • Low calorie cooking spray
  • 400g stewing beef, all visible fat removed, cut into bite-size pieces
  • 2 red peppers, deseeded and cut into bite-sized pieces
  • 1 small sweet potato, peeled and cut into bite-sized pieces
  • 200g green beans, trimmed and halved
  • 2 garlic cloves, finely chopped
  • 2 tbsp jerk seasoning (I added more ) 
  • 1 tbsp red wine vinegar
  • ¼ tsp sweetener
  • 200g passata with onions and garlic
  • 200ml beef stock
  • 2 tbsp Worcestershire sauce
  • Salt and freshly ground black pepper
  • 200g dried long-grain rice
  • A small handful of flat-leaf parsley, finely chopped, to garnish

Tip: Make it serve 4: Increase the beef to 800g, add another red pepper and small sweet potato, increase the beans to 300g, add another garlic clove and double the amount of passata and stock. Bake for an extra 20-30 minutes, or until the beef is tender. You will need to double the rice, too.

Method

  1. Preheat your oven to 160°C/140°C Fan/Gas 3.
  2. Place a medium, flameproof casserole dish sprayed with low calorie cooking spray over a high heat. Add the beef and fry for 4-5 minutes, or until lightly browned, stirring occasionally.
  3. Add the peppers, sweet potato, beans, garlic, jerk seasoning, wine vinegar, sweetener, passata, stock and Worcestershire sauce. Season and stir well. Cover and cook for 1½ hours, or until the beef is meltingly tender.
  4. Cook the rice accordingly to the packet instructions, then drain well. Divide the stew and rice between 2 bowls, garnish with parsley and serve.
