Skinny scan bran carrot cake muffins topped with lemon cheese cake cream

Hi all, I was inspired by one of my lovely members to make my version of scan bran carrot cake. I bloody love scan bran, it’s mega filling and fab for weight loss as it’s packed full of fibre.

Dinner was tex mex turkey chilli with cauliflower. The recipe is on another blog on here.

So here’s the muffins

Makes 6
Total time: Less than 30 mins
Syns per serving: 1 HEB and 2.5 syns for 2 muffins (1.25 each)
Or 13.5 syns for all 6 if not using them as a HEB


4 Scan Bran, crushed
1 Weetabix, crushed
150g grated carrot
½ tsp nutmeg
1 level tbsp runny honey
2 level tbsp mincemeat
3 beaten eggs

For the topping:
1 pot quark skimmed milk soft cheese
Lemon cheese cake essence or just lemon essence (cupcake world or tesco sell this)
Sweetener to taste

Tip: You can also make this as a single larger cake, which is gorge. I didn’t have a cake tin so made muffins.


Preheat oven to Gas Mark 4/180°C/160°C Fan.
Mix all the ingredients together.
Transfer the mix into a baking tin lined with non-stick baking parchment and bake for 20 minutes or a muffin tray sprayed with fry light.
When cooked leave to cool.

For the topping, mix the quark with lemon essence and sweetener to taste and spread onto the muffins once cooled.

Served with mixed berries for extra speed foods

Firey chicken fajitas

Thanks to everyone for their meal inspiration!! Danni I went with yours!!

I used this recipe, super quick and really simple 🙂

Mexican chicken fajitas. Syn free on ee or eesp. My mouth is still on fire though!! I added loads of red chilli to the salsa, OMG it was firey!!!!! Gorgeous though!! Needed my quark dessert to cool my mouth down!!!

I used lettuce wraps but you can use a HEB if you preferred. Or syn a wrap.

Love love love this!!


1 red pepper, halved, deseeded and finely sliced
1 green pepper, halved, deseeded and finely sliced
2 medium red onions, halved and finely sliced
2-3 skinless boneless chicken breasts, cut into chunks
1 tsp smoked paprika
1 tsp cumin
2 fresh red chillies, deseeded and finely chopped
Juice of 1 lime
Low calorie cooking spray
Salt and freshly ground black pepper
For the salsa
½-1 fresh red chilli, deseeded and finely chopped
15 ripe cherry tomatoes, halved
Small handful of finely chopped coriander
Salt and freshly ground black pepper
Juice of 1 lime

Tip: enjoy these fajitas with homemade coleslaw (cabbage, carrot and onion mixed with fat free plain yogurt), grated cheese (Healthy Extra ‘a’ choice) and rice.

Spray a non-stick pan with low calorie cooking spray and place over a medium-high heat. Add the peppers, onions, chillies, lime juice and spices and stir-fry for 4-5 minutes. Add the chicken, then stir-fry over a high heat for 5 mins until the chicken is cooked.

Meanwhile, tip the salsa ingredients into a food processor or chop, along with the lime juice and a little seasoning and pulse until finely chopped.
Lay out the ingredients on a table and serve.




Piri piri turkey burgers with BBQ stir fry & eesp cottage pie with veg x

Today’s gorge eesp food.

Breakfast was 35g of tesco blueberry wheats and berries. Not impressed. You don’t get many and they didn’t fill me up at all!! Won’t be having these again, which will please my bf as he loves them!

Lunch. Piri piri turkey burgers and stir fry. Mega quick and simple. I buy less than 3% fat turkey mince from tesco. Just mix this up with seasoning, a splash of soy sauce and Swartz piri piri spices. Divide it up, roll in to a burger shape and pan fry on both sides until cooked through. The stir fry was gorge, I had it with chopped chillies, ginger and garlic, soy sauce then the rest of yesterday’s spicy BBQ sauce. Recipe is in last nights post if you search through.

Dessert was fat free cottage cheese, sweetener and chocolate flavouring with berries. Syn free.

Dinner. Cottage pie with a swede mash topping. This recipe is from our website but I amended it slightly. Here’s the original :-


1kg swede, peeled and chopped
Salt and freshly ground black pepper
Low calorie cooking spray
1 red onion, finely chopped
2 garlic cloves, crushed
2 celery sticks, finely chopped
2 carrots, peeled and finely chopped
500g lean beef mince (5% fat or less)
400g can chopped tomatoes
1 tbsp vegetable stock
1 tsp sweetener
2 tsp dried oregano
1 egg, lightly beaten

Cook the swede in a saucepan of lightly salted boiling water for 12-15 minutes or until tender. Drain, return to the pan and mash until smooth. Season well and set aside.
Meanwhile, spray a large non-stick frying pan with low calorie cooking spray and place over a high heat. Add the onion, garlic, celery and carrots and stir-fry for 5 minutes. Add the mince and stir-fry for 5 minutes, then add the tomatoes, stock, sweetener and oregano and stir well. Bring to the boil and remove from the heat
Preheat the oven to 200°C/180°C Fan/Gas 6.
Transfer the beef mixture to a casserole dish and spread the mashed swede over the top, smoothing the surface with a fork (adding a pattern if you like). Brush with the beaten egg and bake for 25-30 minutes or until lightly golden and bubbling. Serve with purple sprouting broccoli, mange tout and green beans.

I did the singing swede, ie just pop it in the microwave for about 20 minutes then chop up and mash. I used turkey mince as it needed using and I added a beef stock cube crumbled in, left out the egg and added some chilli flakes and Worcestershire sauce. It was gorgeous!!!

I had mine with lots of veg and my creamy horseradish cabbage. The nicest way to make this is to pan fry the cabbage with some garlic, add chicken stock, quark and a tsp of horse radish, I sometimes add a tbs of Philly extra light too to make it creamier, but I didn’t have any and didn’t want the syns anyway. It’s best with Savoy cabbage. I only used half a tsp of horseradish today as I was just cooking for myself.

Dessert was quark, shock ha ha and mint options with berries. 2 syns. Snack after the gym, as breakfast didn’t fill me up was a rocky road hi fi and come carrot sticks.

Loads of speed foods 🙂 the more speed you choose the more weigh you’ll lose. I’m going to drive my members mad with this saying lol!!!

I also did an early 45 minute spin class and a 45 minute body pump before work today. I’m really trying to work on my legs! I’ve always had bigger legs than my upper body, well most people do lol, you’d look a bit weird with massive legs as arms!! My inner thighs and legs have always been my nemesis!!! I’d kill for long slim legs, but thanks to my darling mother I’ve never had them!! When I was at my slimmest and running loads they looked better. So even though I hate running, I think I need to start again!! I do mainly classes, which I love, I really need to do more weights again. My only issue is I suffer with an achy clicky right shoulder. Weights always make it worse, but I love it!!! Luckily there’s a beauty room at my gym, so I had a massage straight after to work out the knots. It was amazing and so needed!!!! I had a mix of a bamboo massage and hand massage. I’ve also got a spikey ball that I use at home. You lie on the floor with it underneath your shoulder and basically move around lol!! I really hope my neighbours have never seen me doing this!! They’ll think I’m mental!!!

Cajun chicken salad and spicy BBQ sauce. Curry in a hurry!

Good evening!!

I’ve loved my food today!!!!!! I’m still doing eesp as need to get back to target.

Breakfast was scrambled eggs, smoked salmon and sautéed veg with one scan bran (a bit of marmite on it). Syn free as the scan bran is part of my HEB.

Lunch. Cajun chicken salad with my home made spicy BBQ sauce/relish. I use the Schwartz Cajun spice powder on the chicken. The BBQ sauce recipe is below :-

BBQ sauce recipe

1 onion, peeled and roughly chopped
1 tsp mild chilli powder
230ml passata
2 tbsp artifical sweetner
4 tbsp balsamaic vinegar
1 tbsp worchestershire sauce
1/2 tsp mustard powder
salt and freshly ground black pepper.

Spray a pan with fry light and sauté the onion and chilli powder over a low heat for 5 minutes until softened. Stir in the remaining ingredients, bring to the boil and simmer for 10 minutes until thickened. Season and serve.

Syn free.

Dessert berries with fat free cottage cheese and lemon cheesecake flavouring from cupcake world online. All flavourings are syn free. Syn free.

Dinner was amaze!! I’d say it’s one of my signature dishes! Super quick and easy curry in a hurry. I prefer it with chicken but you can use any meat or fish. I’d usually use chicken breast but we had roast chicken left over from yesterday’s roast so I used that.

Fry off some garlic, ginger, chilli, peppers, mushrooms and chicken. Once all browned add Schwartz medium curry powder. I don’t measure, but I add a lot!!

Then add a tin of chopped tomatoes and 15 ml of chicken stock. Simmer till all cooked through. Season. Take off the heat and stir in a tbs of quark ( you can use fat free yogurt if not on eesp) for the best curry add freshly chopped mint and coriander. I didn’t have any so left this out, but it does really make it!! I served mine with cauliflower rice and my bf had his with regular rice. Yummy!!!!

Dessert was my favourite!! Quark with a mint sachet options and berries. 2 syns and my other part of my HEB a chopped up rocky road bar.

I’ve ordered some new make up today!! I can’t wait to test it all out and report back!

Tex mex chilli and cauli rice

Lovely dinner tonight. I’m still doing eesp till Sunday. I’m still dry too!!!! No alcohol has passed my lips since nye!!! So proud of myself. I’ve lost nearly 1/2 stone so it’s defo helping!!! Tomorrow’s the real test as I’m in Swansea for my bf friends birthday. I honestly can’t remember the last time I went to a party and didn’t drink !!! It’s going to be a challenge, but when I put my mind to something and I commit to it, I do it!! Wish me luck !!

Tex mex chilli and cauliflower rice. Syn free.

Fry off your less than 5% mince, I had beef but you can use turkey or quorn.
Then add chopped onions, peppers and mushrooms. I don’t measure herbs or spices I’m afraid. I’m a chuck it in and taste kinda girl!! So I add tons of cumin as this is the tex mex spice, approx a tsp cinnamon and approx a tsp or 2 of cayenne. Depends how spicy you like it. Add some fresh chopped garlic and season. Then add a carton of passata and a tin of kidney beans. Now I always use kidney beans in chilli sauce as they are free but they aren’t a P food so you can replace these with plain beans and a bit of chilli powder. I also add a few splashes of Worcestershire sauce. Simmer away until the mince is nice and soft. Done!!

Cauli rice is mega easy. Blitz some cauliflower and microwave for 4 minutes. Done, no water nothing.

Quorn bolognese with courgetti and chicken tarragon casserole with swede mash x

Hi all.

Busy day again today!!! No gym, as didn’t have time. Don’t you just love it though when you’ve got a massive list of things to do and you can cross off tons in a day!! Feels so good!! I’m not the most organised person in the world, everything is stored in my head and I can leave things till the last minute. However not any more!! I’ve even got new stationary!! Check me out!!

So today’s food.

Breakfast was weetabix, berries and cinnamon. HEB

Lunch was quorn bolognese with courgetti. Syn free.

My recipe:-
Fry off quorn mince, with your veggies. I used sainsburys ready chopped frozen carrots, celery and onions, I added mushrooms, garlic, crumbled in a beef oxo, seasoning, a few chilli flakes, basil, oregano and Italian mixed herbs. I also added chopped tomatoes then let it simmer away.

My courgetti is just a courgette twisted through my Spiralizer and fried off in fry light for 5 minutes. So quick and simple and a fab way of adding speed foods, especially on eesp. My spirilaizer is from amazon.

Dessert was obviously quark, options and berries!! 2 syns. Today I had mint.

Dinner was one of my favourites!!! Chicken tarragon casserole and swede mash. This is a throw everything in dinner!!

Get a large saucepan and fry off chopped chicken breast. I use three between two of us. I then added some more of my new fav frozen chopped veggies, I also added mushrooms, more onion, courgettes and some red pepper. Fry all that off, then add garlic, lots of tarragon, some rosemary, thyme, sage and a bit of parsley (optional), I also threw in a pinch of mustard powder and a large tbs of tomato purée and 400ml of chicken stock made with 2 chicken cubes. Then just let it simmer away.

My swede mash is using the singing swede technique. Literally just out your swede in the microwave and cook for about 15 minutes. Remove, peel and mash. Simples. Again this is all syn free and perfect on eesp. We both adore it!!!!!

Dessert will be more of my fav berries, with sweet cottage cheese. If you still haven’t tried this give it a whirl. It’s fat free cottage cheese as it’s a P food on eesp, mixed with sweetener and flavourings. My favourite flavour so far is choc orange or English trifle flavour. These are from cupcakeworld. Tesco sell flavourings and so do eBay etc…… They are syn free.

Yuk sung and turkey burgers xx

Hi all.

I promised my recipe for yuk sung so here it is below. I loved it!!!!

I’ve not long got back from a wonderful class on my team. The weight losses were amazing!!! The consultant is just fantastic!! So warm, caring and also hilarious!! She’s so passionate about the plan and it’s infectious. One lovely girl mentioned my blog and that it helped her. Blush!!! What a lovely thing to say, thanks Hun and really well done on your amazing weight loss!!!!! It’s so nice to know that I can not only help my amazing members of my group, but I can help other people too. This is exactly why I do it. SW changed my life forever, so it’s really nice that I can give something back. There’s a lot of groups online that aren’t official groups and incorrect information can be given out. There’s never ever a substitute to going and staying to group. Your own consultant should always be your first point of contact. I only ever share things that we are allowed to share and I only share things when we are allowed to. The rest is my personal recipes and then of course shopping, make up etc!! It by no means replaces image therapy. Facebook is amazing and I love love love it, but sitting in a room with other slimmers and your lovely consultant, will always be the very best way to learn about food optimising and to get support, also it’s really good fun!!! If you don’t stay you really are missing out guys. This is simply an additional life line for people in-between group 🙂 So if you have syns questions, plan questions etc, please always ask your consultant first or make use of all the over tools you get once you’re a member.

So here we go, today’s food.

Breakfast was 40g all bran, berries and cinnamon. HEB and some of my HEA

Lunch, yuk sung and stir fry.

little gem lettuce leaves
Low calorie cooking spray
Garlic granules
3cm fresh ginger, peeled and sliced very finely
Mushrooms, finely sliced
Quorn mince (can use pork, turkey or chicken too if less than 5%fat)
As much ready chopped frozen celery, onion and carrot mix from sainsburys
A few big splashes of dark soy sauce
2 tbsp oyster sauce
Chopped red chilli

Literally just fry it all off and mix in the sauces then serve in the lettuce leaves. I had mine with stir fry. I added chicken stock and lime to this. Yummy and syn free, also a perfect eesp meal.

Dessert was my fav, quark mixed with chocolate praline options (2 syns) served with mixed berries.

Dinner was turkey burgers and more stir fry. Just mix together the mince with whatever spices you like, I liked adding ginger, chilli and Cajun or Moroccan spices. To bind use an egg white. These were baked in the oven then own fried to brown off. Had them with stir fry and a tbs of old El Paso salsa, this is mega low!!! 2tbs is 0.5 syn. Burgers are Syn free and again, fab on eesp!!

Dessert was my eesp version of English trifle. OMG I loved it!!! I highly recommend this flavour. So it’s just fat free cottage cheese, ( yes I know, open minds please he he) mixed with sweetener, English trifle flavouring from cupcake world and more mixed berries then a crumbled rocky road bar from my HEB. Heaven!! So far this is one of my favourite flavours, along with mint choc, orange choc, rhubarb and custard and key lime pie.

I hope you’ve all had a fab day. I can’t wait to watch cbb lol, sad I know!! I’m so glad ken has been thrown out now too!! I think they’ve actually done him a favour, he would of just got himself in even more trouble if he stayed!!

Pizza toped chicken


My eesp dinner x

Serves: 1
Prep. time: 15 minutes
Cook time: 25 minutes
Total time: 30-60 Minutes
Syns per serving:
Add 6 Syns if not using Cheddar as a Healthy Extra on Original and Extra Easy.

This Italian-inspired dish gives you all the taste of cheesy pizza, for Free! Using chicken or turkey as a base saves on doughy Syns and provides a real deep-pan meat feast! Alternatively top a jacket potato or omelette.


½ small red onion, chopped
½ red pepper, chopped
1 small clove of garlic, crushed
1 tbsp stock
2 vine tomatoes, skinned and chopped
1 tbsp tinned tomatoes
1 tsp tomato puree
1 tsp oregano
1 chicken fillet
Low calorie cooking spray
40g low fat hard cheese, grated
1 cherry tomato, halved
Fresh basil, roughly chopped

Place the onion, pepper and garlic in a small saucepan with the stock and simmer for a few minutes.
Add the vine tomatoes to the pan, then the tinned tomatoes, tomato purée and oregano. Cut the chicken fillet in half horizontally, being careful not to cut it the whole way through. Fold open to make a butterfly shape. Spray a non-stick frying pan lightly with low calorie cooking spray then fry the chicken to give colour on both sides. Place the chicken on a baking tray and place in the oven, 220ºC/200°C Fan/Gas 7 for 15-20 minutes.
When cooked, place the tomato mixture on top of the chicken. Add the cheese and sprinkle with basil. Place the cherry tomato on the top, then put back in the oven for 5 minutes.

Tip: Serve with a huge crispy salad, a jacket potato or roasted vegetables.

Amaze slimming world Burmese coconut kaukswe curry, a taste of Asia!!

This is just heaven!!!!!!! The perfect Friday night fakeaway. If you’ve never tried this Asian curry you don’t know what you’re missing!!!!

1 syn per portion

You will need:
Salt & freshly ground pepper
400g skinless and boneless chicken cut into bite size pieces
2 large onions, roughly chopped
5 garlic cloves, roughly chopped
1cm fresh root ginger, peeled and finely grated
fry light
100ml light coconut milk (we used less)
500ml chicken stock
400g mixed vegetables (such as carrots, courgettes, green beans, baby corn etc, cut into pieces)
2 tbsp curry powder (whichever strength you like!)
200g dried noodles ( I had cauliflower rice as doing eesp)
A small handful of chopped corriander
1/4 red onion, finely chopped
1 chilli, deseeded and thinly sliced
Lime wedges, to serve

Season the chicken and set aside. Put the onions, garlic and ginger in a food processor and blend until smooth, my bf didn’t bother doing this, adding a little water if needed.

Place in a large frying pan, sprayed with fry light, over a high heat and cook the onion mixture for 5 minutes. Add the chicken, reduce the heat to medium. Add the coconut milk, stock, vegetables, and curry powder and bring to the boil. Reduce heat, cover and simmer for 20 minutes.

Meanwhile, cook the noodles according to how the packet says, drain and divide into 4 bowls/portions.

Ladle over the curry and scatter the corriander, red onion and chilli.
Serve with lime wedges for squeezing over.

Cauli rice is just grated cauliflower microwaved for 4 minutes.

My dessert was gorgeous too!! I had quark, mixed with choc shot, cupcake worlds cherry bakewell flavouring they sent me, sweetener, berries and crumbled up hi fi bar as part of my HEB. 1 syn and so worth it!!!

Mini ham and mustard quiches and paprika pork

Hi guys. All ok? Here’s my food for today. Amazing food day although I’ve just realised I’ve eaten a lot of pig and feel quite guilty now lol. I’ll get over it! Sorry vegetarian followers 😦

Breakfast was weetabix and berries. Ran out of porridge and didn’t have time for eggs. It was really nice for a change. HEB

Lunch was my amazing mini ham and mustard quiches. OMG I adore these!!! Spray your muffin tin with fry light and line with ham, make the sure the ham is lean and has no visible fat. Whisk together 2 eggs, a small tub of fat free cottage cheese, seasoning and a pinch of mustard powder. I added onion, mushrooms to the mixture and mixed herbs sprinkled on top. Bake for approx 20 minutes on 200. Might take less time depending on your oven. You can eat them hot or cold with some lovely speed foods.

Dessert was of course quark, options sachet and fruit, all eesp.

Dinner was so nice!!!!!!!!! Haven’t had this for ages. I think when I first tried I was a bit underwhelmed by the flavours, so this time I added a bit of cumin and chilli flakes as these go well with paprika. You can do this is a slow cooker and add the quark or ffff before serving. My lid to my slow cooker has just smashed everywhere. So gutted!!!!!

Paprika pork
Serves: 4
Cook time: Ready in 50 minutes
Total time: 30-60 Minutes
Syns per serving:


Low calorie cooking spray
2 large Spanish onions, cut into thin wedges
1 red pepper, deseeded and cut into chunks
500g lean pork fillet, cut into chunks ( I use steaks)
2 tbsp paprika (I add more and a bit of cumin and chilli, these are optional)
300ml chicken or vegetable stock
6 tbsp fat free natural fromage frais (I’m on eesp so using quark)
Salt and freshly ground black pepper
Handful of roughly chopped fresh flat-leaf parsley (optional)


Spray a large frying pan with low calorie cooking spray. Add the onions and pepper and cook for 5-6 minutes, stirring occasionally. Stir in the pork and cook for 4 minutes or until browned. Sprinkle over the paprika and cook for 1 minute. Add the stock to the pan and bring to the boil, then cover with a tight-fitting lid and simmer for 30 minutes.
Stir most of the fromage frais into the pork mixture and heat gently for 2 minutes. Season to taste, garnish with the remaining fromage frais and parsley, if using, and serve with boiled rice and vegetables of your choice.
Tip: Pork tenderloin is very lean and the vacuum-packed kind offers the best value.

*This dish is suitable for freezing, you can freeze this dish for up to 4 months just omit the fromage frais
